Hey Guys. Today we’re going to bake some zucchini bread chocolate chips. And I’ll show you how to do it.

I’ve already combined my dry ingredients. I’ve got 1 cup of flour, 1/2 a cup Dutch-processed cocoa powder, 1 teaspoon baking soda, and 1/2, a teaspoon salt. You will need another bowl to add two slightly beaten eggs, 3/4 cup packed light brown sugar, 1 teaspoon vanilla extract, 1/2 a cup of vegetable oil, or canola oil. Mix it well until all the brown sugar clumps are all gone and the mixture is smooth. Then we’re going to combine our wet ingredients with flour mixture one and a half cups of packed shredded zucchini. Stir it up together until combined.

Baking the Zucchini Bread With Chocolate Chips

We’re going to be adding the 3/4 cup of semi-sweet chocolate chips until combined. We’re going to grease our 9 by 5 baking powder in there it smells so good. I’m going to bake this in a 350-degree oven for about 50 to 60 minutes or until the toothpick comes out clean. Our zucchini bread is ready and I baked it for exactly 60 minutes. So I wanted even loosen up the bread with a butter knife around the edges. I want to turn it upside down.

The funny story is that first time I baked this my kids thought it was a chocolate cake or brownie. They started eating it with vanilla ice cream on the side. Then they told me after I got off work how good the brownie was, so they didn’t know it was even chocolate zucchini bread. It’s very decadent rich chocolate it’s delicious.

Ingredients
  

  • 2 cups 300g zucchini, peeled, grated
  • 1 tsp 6g baking soda
  • 1 1/4 cup 160g all-purpose flour
  • 1/2 tsp 2g salt
  • 1/2 cup 60g unsweetened cocoa powder
  • 1 tsp 5g vanilla extract
  • 1/2 tsp 1g instant coffee
  • 1/2 cup 100g sugar
  • 1/4 cup 60g yogurt
  • 1/4 cup 60ml oil
  • 3.5 oz 100g dark chocolate (55%-70%), chopped
  • 1.5 oz 40g dark chocolate (55%-70%), chopped
  • 2 eggs
  • Topping

Notes

1. Preheat oven to 350F (180C). Grease and line a 9×5 inch (23x13cm) loaf pan with parchment paper.
2. Place the grated zucchini in a sieve to remove excess moisture until you prepare the rest of ingredients.
3. In a bowl, whisk together flour, cocoa, baking soda, instant coffee and salt. Set aside until ready to use.
4. In another bowl, whisk eggs with sugar until well combined. Stir in vanilla extract, yogurt, and oil. Add flour mixture and stir until well combined. Add grated zucchini and chocolate.
5. Pour the batter into the prepared pan and top with the rest of the chocolate.
6. Bake for about 45-60 minutes or until a toothpick inserted into the center comes out clean.
7. Let sit for 5 minutes and then transfer to a cooling rack to cool completely.
